Uso de harina de kelp (Macrocystis pyrifera) en alimentos para camarón.

Resumen

La atractabilidad, la palatabilidad, la textura, y estabilidad en el agua de los alimentos para
camarón son factores críticos para obtener tasas máximas de ingestión que permitan cubrir los niveles de
nutrientes requeridos y lograr el máximo crecimiento, especialmente cuando los alimentos son suministrados
con poca frecuencia. La harina de kelp deshidratado es un ingrediente bajo en calorías, con un alta
concentración de minerales (Mg, Ca, P, K y I), vitaminas, proteínas, carbohidratos complejos poco
digestibles, fibra y bajo contenido en lípidos. Los carbohidratos complejos o ficocoloides se encuentran en
forma de gomas: alginatos, fucoidinas y manitol. Los alginatos puros han sido utilizados como aglutinantes
en alimentos acuícolas especialmente de larvas de peces y crustáceos así como en diferentes industrias por
sus propiedades gelificantes y texturizantes. El objetivo de la presente revisión fue evaluar el efecto de la
inclusión de diferentes niveles de harina de kelp (Macrocystis pyrifera) sobre algunas propiedades químicas y
funcionales de alimentos experimentales y comerciales para camarón blanco L. vannamei así como el efecto
sobre diferentes parámetros zootécnicos. Para ello se realizaron varios estudios: dos bioensayos donde se
evaluó el efecto de la inclusión de harinas de kelp chilena (0, 4 y 8%) y mexicana (0, 2 y 4%) en alimentos
experimentales con 35 y 30% de proteína respectivamente y un tercer bioensayo donde se evaluó el efecto de
la inclusión de 3.2% de harina de kelp en alimentos comerciales con 25% de proteína y diferente proporción
de proteína vegetal/animal. Cada tratamiento se evaluó con 4 replicados y 10 camarones por acuario, durante
28 días midiendo diferentes parámetros como: consumo de alimento, ganancia en peso, tasa instantánea de
crecimiento, tasa de conversión alimenticia, eficiencia de utilización proteica, digestibilidad, excreción
amoniacal, sobrevivencia, producción de biomasa y composición corporal. Por otro lado, se fabricaron por
triplicado 9 alimentos comerciales peletizados con diferentes niveles de kelp (0, 3 y 5%) y de proteína (30, 35
y 40%) a los que se les determino la estabilidad en el agua y capacidad de retención de agua como en los
alimentos de los primeros bioensayos fabricados a escala laboratorio. Adicionalmente, se fabricaron otros 3
alimentos con 30% de proteína pero con diferente relación de proteína animal vegetal para determinar el
efecto de relación proteína animal/vegetal sobre la magnitud del efecto del kelp desde el punto de vista
funcional. La inclusión de los diferentes niveles de harina de kelp, especialmente los niveles entre 2 y 4%,
tanto en los alimentos experimentales como comerciales aumento del simple al doble el consumo del
alimento, el crecimiento y la producción de biomasa especialmente cuando la proteína animal fue dominante.
La digestibilidad de la materia seca de los alimentos también se vio mejorada con estos niveles. La estabilidad
de los alimentos comerciales peletizados, cuando la harina de kelp fue utilizada como aglutinante, fue menor
que con el aglutinante sintético, sin embargo fue muy buena, especialmente cuando la proteína animal fue
dominante, con valores de perdida de materia seca después de 1 hora de inmersión en agua marina de 3 a 4%.
Adicionalmente, con la harina de kelp los pelets aumentaron significativamente su capacidad de absorber
agua, adquiriendo una textura suave y elástica una vez que estos entran en contacto con el agua. Se concluye
que la harina de kelp Macrocystis pyrifera incluida entre el 2 y 4% en alimentos peletizados para camarón,
funciona como un excelente aditivo atractante, aglutinante y texturizante, que permite una utilización más
eficiente de los nutrientes dietarios, al asegurar una menor lixiviación y una amplificada ingesta.
