Resumen

Todas las especies de vertebrados tienen requerimientos de ciertos ácidos grasos
poliinsaturados (PUFA) que son suministrados por los lípidos en la dieta. Si aparece una
deficiencia, el animal sufre una reducción en el crecimiento, alteraciones en la reproducción y
patologías diversas. Estos ácidos grasos son los denominados ácidos grasos esenciales
(AGEs). Este término incluye ácidos grasos de la serie n-6, derivados del ácido linoleico (18:
2n-6), y de la serie n-3, derivados del ácido linolénico (18:3n-3).
